All Hail The Prince of Pasta!
Over the course of his career, Vincenzo Spinosi has served dishes of Maccheroncini di Campofilone, a rich egg pasta from his hometown that has IGP-protected status in Italy, to celebrities and other notable persons.
Since the 1400s, the people of Campofilone have been making egg-rich pasta that could be dried and still retain all of its delicious flavour and texture. The recipe today is the same as it was then: just 10 fresh eggs and a kilo of semolina wheat flour.
In 1933, Spinosi’s father Nello set up the first factory in Campofilone to mass-produce the pasta. Spinosi has taken his father’s vision even further, inventing new shapes and inserting ingredients such as spinach and truffles into the mix.
